Lemon Curd Kisses –

Valentines day might be over, but that doesn’t mean the loveliness has to stop. Today I thought i’d make some Lemon Curd Kisses, with homemade lemon curd 🙂

To make Lemon Curd (which is easier than I first thought) –

4 Lemons, Zest and Juice

200g Caster Sugar

100g Unsalted Butter

3 eggs + 1 egg yolk

Melt the butter with the sugar over a low heat, with the lemon zest and juice. Lightly whisk the eggs and yolk. Very lightly whisk the eggs into the melted butter mixture (otherwise you might end up with scrambled eggs), whisk until all ingredients are combined. Cook over a low heat until its nice a creamy and thick enough to coat the back of a spoon.  When its ready, poor into a sterilised jar.

To make the biscuits –

100g butter

70g caster sugar

1 egg yolk

0.5 tsp vanilla extract

zest 1 lemon, juice of 0.5

140g plain flour

1/4 jar of your homemade curd

70g icing sugar

Mix the butter, sugar, egg yolk, vanilla extract and half thelemon zest together in a bowl. When everything is nicely creamed together, add the flour. I found it easier to mix the flour in with my hands to get it all to blend together. Roll out the dough to about 0.5cm, and cut out your shapes. You will need an even number of shapes, I used a 5cm heart cutter. Place all your shapes on a sheet of baking parchment on a tray at pop them in the fridge whilst the oven heats up, you will need 180 degrees for a fan oven. Cook your biscuits for around 8-10 minutes. Leave them to cool down completely. Once they are cooled, spread half of the biscuits (on the underside) with your lemon curd and stick it to another biscuit. Mix your icing sugar and lemon juice together to make a lovely smooth paste, use it to drizzle over the biscuits. And finally, sprinkle the remaining lemon zest over the biscuits to decorate – then EAT!

  1. I love lemon curd and my sister has just given me the Thane Prince (from the Big Allotment Challenge) book on Perfect Preserves. This has a recipe for lemon curd and I’m definitely going to give it a go. I love to sandwich a Victoria sponge with lemon curd and top with lemon buttercream. Your biscuits look delicious too, I’ll be giving the recipe a go.
